Makes 12 finger sandwiches
6 slices of soft white bread
Olive oil to brush
3 green tomatoes
Flour for dusting
Salt and Pepper to season
Oil for frying
1 tsp chilli flakes
Cut the crust of the brad, then use a rolling pin to flatten the bread slices until required thinness.
Brush with olive oil and gently toast in a pan over moderate heat.
Set aside. Slice the tomatoes in thick slices. Dip in the flour
and season with the salt and pepper. Fry until lightly caramelized but
still firm and holding its shape. Lightly spread the fried bread slices with mustard. Halve the fried tomatoes and cut the bread to match the size of the tomatoes. Sprinkle with chilli flakes, then layer into small sandwiches.
